How to Fry Fresh Garden Squash

One of my favorite things to do with the enormous amount of squash that comes from the garden is to fry it. Yes, I know it is not healthy for us in large quantities, but everything in moderation, right? If you have ever wondered how to create such deliciousness, here are a few steps to help you out.

 

First, cut the squash in VERY THIN slices. This helps the squash get super crisp once it is fried. I sprinkled some salt and pepper on the slices in this step, but you can also wait until the end to do this.

 

 

Next, soak the squash slices in an egg wash (one or two eggs beaten and about a cup or so of milk stirred in). I like to let the squash sit in the egg wash for a few minutes. This helps the cornmeal “stick” a bit better.

 

 

Move the squash from the egg wash to a bowl of corn meal. A shallow dish works great because it helps the cornmeal get coated on the squash more evenly. I have also tried using a Ziploc and shaking the squash in the bag to coat it.

 

If you haven’t already, you may want to season the squash with salt and pepper.

 

Now it’s time to fry those squash until they are golden brown. I use a shallow pan with about a half inch of vegetable oil. Test to make sure your oil is hot by placing a single slice of squash in the oil. If it sizzles, you can fill the pan with the individual pieces. This process takes quite a while because you don’t want your squash to be touching other slices. You get better overall crispness when they can each float freely in the oil.

 

 

The frying process takes only a few minutes per batch. I decide they are done when they have a golden brown coating. I like to salt the slices as they come out of the hot oil.

 

Mmm Mmm good!

 

A word of warning. You will be tempted to pick up one of those circles of scrumptious squash and pop it in your mouth. DON”T DO IT! They are extremely hot and will burn your mouth. I speak from experience!
